Paua, or Abalone, is in high demand. We catch a limited amount each season. Paua are harvested by hand from Wairarapa and South Island.

Meat only, no skirt or ‘hua’ (guts). This is a premium alternative to minced skirt, and is great for making patties, or creamed paua.
